On hot summer days, there’s nothing better than a really yummy, ice cold drink. I’m not even a big drinker, but there’s something about fruity cocktails being enjoyed in the sunshine that makes me giddy (don’t judge)! If the city’s few outdoor patios are packed, here’s my go to at-home alternative for a great summer cocktail.
A few years ago, I was researching easy-to-make punches and came across this recipe on the website for Woman’s Day. It’s been my “signature” ever since and now faithful m.blog readers, I am passing it along for you to try.
For the ladies—this is only 69 calories per serving.
For the gents—this is one of those drinks that doesn’t taste like alcohol, but gets your girl really drunk, really quick…and we all know what that means!
1 cup of blueberries, picked over, rinsed and patted dry
1⁄4 cup sugar
1⁄4 cup water
1 quart seltzer water
1 ounce of vodka (I prefer Stoli Blueberry)
Garnish: lime wedges
Cook berries, sugar and water in a small saucepan over medium heat, stirring occasionally until mixture simmers and berries begin to burst, about 3 minutes. Pour into a strainer set over a medium bowl or glass measuring cup. Drain 15 minutes or until cool. Discard solids. Makes 1⁄2 cup syrup.
For each serving: Add 2 tablespoons syrup to a 12-ounce glass. Add ice, 1 cup seltzer, vodka (to taste) and wedge of lime.
Garnish with an umbrella (ok, I added this part in—but somehow it makes the drink taste THAT much better!)
